I'm recording 5 Gauntlet Defense laps per day. My best ones ever per Track will be published here. If you have anything better, feel free to post. In case you want to use these laptimes as an orientation for you, I am a Top ~3% driver, so quite good but not an alien.

For London Standard, the best set-up (out of the five cars you've listed) is probably Centenario, Ultima, Battista, FFZERO1.

My favourite noob starter car for London is the Lamborghini Sian (which is quite similar to the Centenario). You need a car with good handling for the start of this track. The Chiron SS300+ seems to be the best overpowered starter car for this track, but it slows down a bit in the curves. In position two, the Jesko, Jesko Absolut, Bolide, One:1, FFZERO1, Ultima RS, etc. are the best options. In position three, after a lot of testing, I have found that the Battista tends to be the best option. This is mainly because it has both good speed recovery and good nitro efficiency, so it beats both the Jesko/Bolide and FFZERO1 in this area. In position four, you need a car with good handling and speed recovery/acceleration. So, cars like the Ultima RS and FFZERO1 are the best options here. Obviously, if you are using these two cars on other positions, then you can't use them here. Ultima RS has better level 3 nitro efficiency than the FFZERO1*, which is the main reason why I think it's better for position 2, which leaves the FFZERO for position 4. (*mainly due to the level 3 NE advantage, the Ultima RS is not useless, and it can sometimes be better than the FFZERO1 in certain situations).

Very similar cars to the Lamborghini Centenario --> W Motors Lykan HS Halloween Ed., Tushek TS900 Apex, Tushek TS900 Racer Pro (worse than Apex), and Bugatti Chiron Sport 110 Ans. The Koenigsegg Gemera is a good accelerator car, but the Bugatti Divo is superior. EDIT: I strongly recommend that you try and obtain the Koenigsegg One:1 next. If you don't already have this car, then it's a major gap in your inventory. The raw top speed advantage is very important for many tracks, and it will make a difference if you don't own ULTIMATEs like the Jesko, Absolut, and Bolide. EDIT2: I also did not realise that you already own the Lamborghini Sian. In my opinion, you should take advantage of this car a lot more. It's actually a really powerful car because it has really good handling (as well as good acceleration), even though its drifting is bad.

Koenigsegg One:1 is the best non-Ultimate car with a high raw top speed. Its specific use is to maintain a high speed without nitro, which is extremely useful during (1) large, sweeping drifts, or (2) before a long stretch of road, where you need to use perfect nitro. Obviously, the usefulness of the One:1's speed advantage is very specific, but there are a surprisingly large number of areas where these skills can come in handy. Every single track in the game has at least one area (usually several) where this specific trait can be useful. The Koenigsegg Jesko and Bugatti Bolide are superior to the One:1 overall, but surprisingly, these two cars are actually not straight upgrades to the One:1, since the One:1 can defeat them in some small areas. However, the Koenigsegg Jesko Absolut is a straight upgrade to the One:1, as far as I can tell. The One:1's perfect nitro efficiency is good, whereas it's level 3 nitro efficiency is bad, so you should pretty much exclusively use perfect nitro with this car.
The Arash AF10 is also very popular as an alternative to the Jesko, Bolide, and Absolut. The AF10 is currently an ULTIMATE car, but it was originally a Legacy car, and it was also available for 7,000,000 FuCs for a long time before it was removed from sale. The AF10 has very high raw top speed and good nitro efficiency, but this comes at the cost of a very wide drifting radius. The AF10's handling is actually decent, so only the drifting is a problem. The AF10's acceleration is one of the worst among Class S cars as well (approximately 2.9 seconds, if I remember correctly). Another popular Jesko-alternative is the Hennessey Venom GT. This car has very high raw top speed and excellent speed recovery, which is an unusual and very useful combination. Recently, within only the past week, I actually managed to achieve a new PB in Gauntlet using the Hennessey Venom GT (specifically in position #3 of The Great Wall: Buddha's Teachings). The main downside of the Venom is the lack of nitro efficiency, so it's only useful in a few specific areas. The Venom's handling is also very heavy, and its drifting is a bit weak as well. The Koenigsegg Agera RS and TRION NEMESIS also have above-average raw top speed, but they both suffer from the lack of nitro efficiency, and their speed advantage is only relatively small. Actually, these two cars have really good handling, and the Agera RS has very good drifting (Nemesis is a bit worse at drifting), so this is the main usefulness of these two cars. The Devel Sixteen Prototype has very high raw top speed, very good nitro efficiency, and very fast acceleration, but it suffers from very bad handling and drifting. The Devel is sometimes a good alternative to the Chiron SS300+, e.g. on tracks like Area 51.
EDIT: I would personally rank the RTS cars as follows: - Bugatti Chiron Super Sport 300+ --> Handling and drifting weak (but it has the best acceleration in the game)
- Koenigsegg Jesko Absolut --> No weaknesses
- Koenigsegg Jesko --> Acceleration and nitro efficiency mediocre
- Bugatti Bolide --> Nitro efficiency and drifting radius mediocre
- Koenigsegg One:1 --> Level 3 nitro efficiency weak; speed advantage is only middle-of-the-road
- Arash AF10 --> Acceleration and drifting radius weak
- Devel Sixteen Prototype --> Handling and drifting horrendous
- Hennessey Venom GT --> Nitro efficiency weak; handling and drifting mediocre/weak

Based on the Class S cars that you listed, here is how they rank against each other and how they are useful: - Faraday Future FFZERO1 --> This car is extremely versatile and useful on every track (excellent speed recovery)
- Koenigsegg One:1 --> This car is useful on every track and should not be underestimated (above-average raw top speed)
- Lamborghini Centenario --> This car is very reliable (except for skid/wreck), but it doesn't have any special abilities aside from the standard fast acceleration, good nitro efficiency, and strong handling + drifting; basically this car is a jack-of-all-trades
- Ultima RS --> This car is a junior partner to the FFZERO1; it basically feels like a combo of the FFZERO1 with the Centenario, Senna, and 600LT all rolled into one; very nice drive, with good speed recovery, decent nitro efficiency, decent acceleration, great handling, and decent drifting
- McLaren 600LT --> This car has excellent handling + drifting, and good nitro efficiency; basically useful as a "support car" whenever you aren't already using the previously mentioned four cars (FFZERO1, One:1, Centenario, Ultima RS)
- Bugatti Centodieci --> This car has the 2nd-best straight-line acceleration after the Chiron SS300+, and it's excellent for wide open tracks such as Area 51, French Guiana, and Azure Coast (note: I think the McLaren Artura might be close to this car in acceleration)
- McLaren MP4-31 --> This car has the best handling in the game, and it is useful for a few specific areas that require insanely good handling in Gauntlet mode, such as on Orbital Loop and Transylvania
- Pininfarina Battista --> This car has excellent speed recovery, nitro efficiency, and drifting, but actually it suffers quite a lot from bad handling, so I personally find the FFZERO1 and Ultima RS to be more useful overall
- Bugatti Divo --> This car is almost rendered obsolete by the previous lineup of cars, but it's obviously still an excellent car
- Lamborghini Sian --> Like the Divo, there's really not a lot of usefulness left for this car when comparing it to your previous lineup, since you only need a few cars in Gauntlet mode to perform well; again, it's still a great car

Note: Even though I ranked the Battista lower than the 600LT, Dieci, and MP4-31, it actually has more tracks than all three of those cars. Nonetheless, the rankings for the first four cars are generally accurate. The FFZERO1 has the most tracks, closely followed by the One:1, then distantly followed by the Nario, and trailed by the Ultima (which is followed by the Battista). The rest of the cars fill in the smaller gaps.
The Sian has a surprisingly high number of tracks (relatively speaking), with eight in total. This is double the number of the Divo, which has four tracks. This is the opposite of my ranking system, wherein I placed the Divo higher than the Sian.

The main weakness in your inventory is the fact that you don't own the Koenigsegg Jesko Absolut and Koenigsegg Jesko. These two cars are essential on a handful of tracks. ^The Absolut is essential as the starter car (position #1) on: Transylvania: Clifftop Run, Transylvania: The King's Highway, Venice Reverse, The Great Wall Forward, The Great Wall: Buddha's Teachings, and (probably also) Terra 9: Metal Garden.

At the very highest alien level, DEUS is surprisingly used many times as a starter car, more than FFZERO1 in fact. These are the most used Starter Cars by World Record timings w/videos: Chiron SS300+ (24 races, 44%) Absolut (16 races, 29%) Vayanne (8 races, 14.5%) FFZERO1 (5 races, 9.1%) Divo (2 races, 3.6%) DEUS is seriously broken as starter in S8 FWD, FGR and most Tenifire tracks. I enjoyed using it as starter in Cloud Nine where I managed sub 55s, and even playing against my Defence, it totally smokes Chiron SS300+ with its speed tricks. It's the first track I received post Trashtara removal and it is a brilliant showcase in that!
